Ingredients
  • 1 package spaghetti (400g)
  • 5 tbsps olive oil
  • 2 cloves garlic, minced
  • 1 tsp chopped fresh parsley
  • 2 Cups roasted cherry tomatoes (see link below)
  • ½ tsp salt, plus more to taste
  • 2 Cups defrosted shrimp, peeled and drained

Shrimp spaghetti with roasted tomatoes and garlic

Use your fresh roasted tomatoes, throw in some shrimp and garlic and you have a sweet and savoury dish that reminds you of warm summer days by the water. Everyone will love this dish and you will too when you see how easy it is to make.

Method:

  1. put a large pot of water to boil. Drop in 1 handful of salt. When water begins to boil, add the pasta. You can make the sauce while the pasta is cooking.
  2. In a deep sautéed pan, cook garlic and shrimp on medium high heat until the shrimp turn pink. This will take about 5 minutes.
  3. Add the roasted tomatoes to the shrimp sauce and scoop 1 Cup of the starchy pasta water, adding it to the sauce. Combine well and cook on low for 2 minutes.
  4. Add the pasta to the sauce and continue to cook on low heat for another minute. Add more pasta water if it seems too dry.
  5. Add parmigiano cheese and garnish with fresh parsley.
