Ingredients
Marinated Braised + Baked Tofu
  • 1 packet hard tofu (cut into large chunks)
  • 3 tbsps liquid amino/ light soy
  • 1 tbsp sesame oil
  • oil for cooking
  • sprinkle cayenne pepper
Stir-fried Chinese Broccoli
  • handful Chinese broccoli (cut in half)
  • 4 cloves garlic (sliced)
  • 2 tsps liquid aminos / light soy
  • 1 tbsp oil for cooking (I used sunflower)
Fried Black Rice and Bok Choy
  • 1½ cup black rice
  • 3 cups water
  • 1 tsp oil for boiling the rice (I used sunflower oil)
  • handful boy choy (chopped)
  • large thumb ginger (sliced)
  • 2 tbsps liquid aminos/ light soy
  • 3 garlic cloves (sliced)
  • 1 sprig Thai basil (chopped)
  • 1 tsp oil for frying (I used sunflower oil)
Spicy Stir-Fried Oyster Mushrooms
  • 2 large handfuls oyster mushrooms (left whole)
  • 2 tbsps liquid aminos/ light soy
  • 1 tsp sesame oil
  • 1 Heaped tablespoon dou ban jiang (chilli bean sauce)
  • 1 sprig spring onions (sliced)
  • 3 tbsps rice vinegar
  • 2 tbsps water

Pre-cooked rice (best for frying):

Start by cooking the rice. Give it a wash to rid of surface starch. Put into a pot , add the water and bring to a boil. Boil for a few minutes. Drain 3/4 of the water, stir in the oil. Put the lid on and turn the heat to low and leave to cook until the water has evaporated. Give it a mix, add a bit more water, turn off the heat, put the lid on and leave to one side to cool and leave in the fridge for a day


Pre-marinated tofu

Place the sliced tofu into a tupperware container and drizzle with 2 tbsps liquid aminos/ light soy and the sesame oil. Close the tupperware and give it a big shake, leave in the fridge for up to 8 hours, or over night. The liquid will absorb into the tofu.


Tofu:

  1. When ready to cook everything start by preheating the oven to 180℃.Lightly oil a baking dish
  2. In a frying pan, add a drop of cooking oil, get the pan warm and lay out the tofu pieces. Fry until the one side has browned, sprinkle cayenne over it and turn each piece over. Sprinkle the other side with some cayenne and a drizzle of some liquid aminos/ light soy and brown the other side until also browned
  3. Take off the heat and place in the baking dish and bake for 20 minutes


Chinese broccoli

  1. Add the oil to a pan, followed by the garlic, then the Chinese broccoli. Fry for a minute on a high heat then add the liquid aminos/ light soy and a drop of water. Turn down the heat slightly and fry for a few more minutes until the they turn a vibrant green


Stir-fried oyster mushrooms

  1. Add oil to a pan and then the mushrooms, fry for a minute then toss in the garlic
  2. Add the liquid aminos/ light soy, sesame oil and half of the rice vinegar. Fry for a few minutes
  3. Add the water, and bring to a light bubble, cooking for a few more minutes
  4. Turn down the heat and add the dou ban jiang/ chilli bean sauce, the spring onions and the rest of the rice vinegar and fry for another 5 minutes until the water has evaporated


Fried black rice with bok choy

  1. In a wok/ large frying pan add the oil and start by frying the ginger
  2. Add the rice, and stir, frying until all the rice begins to warm up
  3. Stir in the bok choy, garlic then the liquid aminos/ light soy, fry for another 5 minutes, then stir in the Thai basil, frying for a further few minutes. Add a touch more soy if needed then serve
