1.Take the lobster meat out of tails and put in a food processor along with the spring onions, chilli, lemongrass, ginger, egg white, cornflour and lime zest and pulse into a rough paste.
2.Then shape your mixture into balls and roll in the breadcrumbs and Deep fry for 4/5 min or until golden brown.
I served this with a miso mayonnaise and charred pak choi
