- Bring a pot of water to boil; Wash leafy vegetables for later use
- Mix all non-liquid seasonings together in a bowel except soy sauce / vinegar/sesame oil. Pour lard in the pan , let it cook until it’s super hot(when smoke starts to rise), then pour heated lard on top of mixed sauce to bring out the natural flavor and smell of the seasonings, then mix it with soy sauce, vinegar and sesame oil
- Pour some boiling hot water in the mixed sauce to make noodle broth (Chicken broth/bone broth is preferred if available)
- Put noodles in the boiling water to cook, and then put leafy vegetables in the water for 10 seconds before noodles are fully cooked
- Take out both cooked noodles and vegetables from the pot, mix them well with the broth. Ready to serve
