Ingredients
  • 200 g Self Raising Flour
  • 1 tsp Baking Powder
  • 1 Free range egg
  • 300 ml Semi Skimmed Milk
  • 1 tbsp Melted Butter
  • 150 g Blueberries
  • Berries to garnish
  • Maple syrup, to serve

  1. Put the flour into a bowl, add the baking powder and a pinch of salt and mix.
  2. Whisk the egg with the milk in a separate bowl
  3. Make a well in the middle of the dry ingredients and pour in the milk and egg mix
  4. Whisk to make a smooth batter
  5. Add the melted butter and blueberries and gently stir
  6. Heat a teaspoon of butter in a small frying pan
  7. Using a ladle, add a spoonful of batter to the frying pan
  8. Cook for approx 3-4 minutes on each side (or until small bubbles appear)
  9. Serve topped with your favourite berries and maple syrup or honey
