- Put the flour into a bowl, add the baking powder and a pinch of salt and mix.
- Whisk the egg with the milk in a separate bowl
- Make a well in the middle of the dry ingredients and pour in the milk and egg mix
- Whisk to make a smooth batter
- Add the melted butter and blueberries and gently stir
- Heat a teaspoon of butter in a small frying pan
- Using a ladle, add a spoonful of batter to the frying pan
- Cook for approx 3-4 minutes on each side (or until small bubbles appear)
- Serve topped with your favourite berries and maple syrup or honey
