1.Heat a splash of oil in a frying pan and cook onion until it’s soft, then add the paprika & chilli flakes and cook for a further couple of minutes.
2.Now add the tomatoes, nduja, vegetable stock and tomato paste and give it a good stir and leave to cook on a fairly high heat for 8/10 minutes, then add the cannellini beans and cook for another 5 min, season with salt & pepper serve onto toast ( I used spelt sourdough ) and top with some grated Parmesan.
