- Make the dressing: scoop avocado flesh into a bowl and mash with a fork. Add the lime juice, spring onions and fresh herbs and stir to combine. Season with sea salt and some freshly-ground black pepper, to taste.
- Combine the peas, edamame and dried cranberries (if using) in a large bowl. Season lightly with sea salt and freshly-ground black pepper. Add the avocado herb dressing and stir until well combined. Taste and adjust seasoning, if necessary. Serve immediately with an extra squeeze of lime juice (optional).
