Loaf
  • 225 g Plain flour
  • 1½ tsps Baking powder
  • Baking soda
  • 100 g Walnuts, chopped
  • 250 g Unsalted butter, softened
  • 220 g White caster sugar
  • 4 Eggs
  • 1 tsp Vanilla essence
  • 2 tbsps Instant Coffee granules
  • 1½ tbsps Hot water
Vanilla latte buttercream
  • 175 g Icing sugar
  • 65 g Unsalted butter, softened
  • 1 tsp Vanilla extract
  • 1 tbsp Instant coffee granules
  • 1 tbsp Hot water

Coffee & Walnut Cake, Vanilla Latte Buttercream

  • Pre-heat oven to 160℃ 
  • Grease a 9 x 1.97 cm loaf pan with extra butter.
  • Sift flour, baking powder, baking soda and salt into a mixing bowl. Stir in the chopped walnuts. Set aside.
  • Dissolve instant coffee granules in hot water. Set aside.
  • Using a handheld mixer fitted with beaters, cream butter and sugar until light and fluffy, on medium speed. This may take 5 - 6 minutes.
  • Add eggs, one at a time, beating each addition until well incorporated.
  • Fold ⅓ of the flour-walnut mixture into the creamed butter mixture, followed by ½ of the coffee-milk solution. Do not over-mix the batter.
  • Fold in the next ⅓ of the flour-walnut mixture, followed by the remaining ½ of the coffee-milk solution.
  • Then add in the last ⅓ of the flour-walnut mixture. Finally add the vanilla extract and fold in gently.
  • Pour batter into greased pan and bake in slow oven for 50 to 60 minutes. Once a bamboo skewer inserted into the centre of the cake emerges free of cake batter, the cake is done.
  • Remove from the oven and leave the cake in the pan for 10 – 15 minutes before turning out.
  • Once the cake is completely cool, make the vanilla latte butter cream. Firstly add the coffee granules to the hot water to dissolve. Then beat the icing sugar, butter, vanilla extract until mixed well. Then fold in the coffee. Slather all over the cake and decorate with more chopped walnuts.
