  • 875 g Maris piper potatoes
  • 1.5 litre Sunflower oil

The perfect restaurant style chips

  1. Peel and cut your potatoes in chips, 1-1.5cm across. Remove the starch for your potatoes, for best results leave your potatoes to soak in cold water for 2-4 hours. However alternatively to save time you can run them under cold water until the water runs clear.
  2. Put your oil in a deep wide pan (the oil should be at least 4 cm deep but the pan no more than half full). Heat oil to 140 Celsius. Meanwhile pat your chips dry then add to the oil and cook for 8-10 minutes until cooked through but not golden (cook these in batches to ensure oil temperature stays high). 
  3. Increase the oil temperature to 180℃ and place the chips back in for 3-4 minutes until golden crispy (cook in batches).
  4. Immediately salt your chips as they come out of the oil. Serve and enjoy.
