  • 1 tbsp Olive oil
  • ½ Small red onion
  • 1 Large red bell pepper
  • 80 g Button mushrooms
  • 80 g Broccoli
  • 40 g Sweetcorn
  • 3 Sausages of choice
  • Salt + pepper to taste
  • Splash of soy sauce
  • Sesame seeds to top

Sausage + Veggie Stir Fry

One of my favourite dinners/lunches, as this stir fry is so simple, delicious + versatile! You can choose any veggies you'd like + meat/meat alternative of choice. Takes less than 30 minutes to prepare!

  1. Start by cooking your sausages/meat or meat alternative of choice. I personally like to oven cook the sausages before hand for around 10-15 minutes just to ensure that they are fully cooked before adding to the stir fry.
  2. Meanwhile, remove the stems and seeds from your bell pepper before slicing them lengthwise into thick strips. Peel your onion and dice into small slices. The onion will release flavour + soften in the cooking process. Chop up all of your remaining veggies of choice, ready to start frying!
  3. Drizzle your olive oil into a hot skillet over a medium heat. Start to salute your peppers and onions until softened and begin to brown. You can then add in your other veggies of choice and cook for around 8-10 minutes until cooked.
  4. While the veggies are cooking and have roughly a couple of minutes remaining, dice your sausages from the oven and add them into your pan! At this stage you can also season with salt + pepper + add in a splash of soy sauce! Cook for an additional 2 minutes.
  5. Finally, transfer to a bowl + serve with a side of choice, I went for some simple golden vegetable rice! Rice is my personal favourite to serve with a stir fry!
