The Dressing
  • 5 tbsps Olive Oil
  • 1 Lemon (Juice Only)
  • 1 Garlic Clove (Minced)
  • 1 tsp Dijon Mustard
  • 1 tsp Oregano
  • Sea Salt & Pepper
The Salad
  • 100 g Green Beans (Blanched)
  • 1 Head Cos Lettuce
  • 2 Eggs (Boiled)
  • 8 Cherry Tomatoes
  • 15 g Feta Cheese
  • 50 g Cucumber
  • 125 g Tuna (Tinned in Olive Oil)
The Garnish
  • Fresh Mint (Torn)
  • Fresh Basil (Torn)

Tuna Nicoise Salad


  • Bring a small pot of water to a boil, place in two eggs and simmer for 6-7 minutes (medium cooked)
  • Remove eggs and place into ice water to cool and stop the cooking process, once cooled peel shell and cut into 1/4's
  • Bring a small pot of water to a boil, place in green beans and simmer for 2 minutes
  • Drain beans and put into ice water to stop the cooking process and retain bright green colour
  • In a mason jar combine all of the dressing ingredients shake to combine (re-shake prior to dressing salad)
  • Wash and tear cos lettuce and arrange on salad dish
  • Top with beans, boiled eggs, cherry tomatoes cut into 1/4's, feta cheese, sliced cucumber and tuna pieces
  • Shake dressing and drizzle over the salad
  • Garish with fresh torn basil and mint
  • Enjoy!
