  • ½ Cup Water
  • 3 tbsps High quality butter
  • ½ Cup Butter
  • 1 Pinch salt
  • 2 Pcs large eggs
  • 2 Oz Ham (diced)
  • 2 Oz Cheddar/Parmesan (grated)
  • 1 tbsp Fresh parsley (chopped)

HAM AND CHEESE GOUGÈRES

A classic side dish, appetizer or canapés. Comforting, light and super rich in flavours, this will be a great dish that pleases kids and adults. Although classically it is only cheese, I decided to add parsley and ham. You could really make the recipe your own.


Prep 15 minutes
Total 35 minutes

GOUGÉRES:

  • Heat up the oven to 425℉.
  • Bring the water, butter, and salt to a boil in a medium saucepan over medium-high heat.
  • Add the flour all at once into the boiling butter mixture and, using a wooden spoon or spatula, stir until the flour clumps into a ball and pulls away from the sides of the pan.
  • Continue stirring over medium-high heat until the dough leaves an even, dry film on the bottom of the pan, 2 to 3 minutes. (Key step)
  • Drop the ball of dough into the bowl of a stand mixer fitted with the paddle attachment and mix on low speed until the dough is just barely warm to the touch, about 5 minutes.
  • Add in an egg, increase the speed to medium, and beat until incorporated. Repeat with the remaining egg.
  • Stir in the ham, cheese and parsley and mix until smooth.
  • Place the mix in a piping bag and set side.
  • Line up a baking tray with a silpat or parchment paper.
  • Pipe the Gougéres about 1 in diameters, making sure to space them out.
  • Bake the puffs until golden brown, 20 minutes. DO NOT open the oven until baked or they will deflate.
  • Once cooked, let them cool down on a wire rack and now..
