For the topping

Christmas mince pie tray bake

Preheat the oven to 165.c

Grease your tower roasting pan with butter and set aside.

In a large bowl cream together the butter and sugar with the zest of the orange until doubled in size, fluffy and light in colour, gradually add the eggs one at a time.

Once all the eggs have been incorporated, add the vanilla, followed by all the dry ingredients.

Fold this gently until everything is incorporated well. Try not to over mix.

Spoon the mix into the greased dish and smooth the surface.

Spoon the mincemeat and custard evenly over the the surface and using a knife to create swirls to marble the mincemeat and custard over the top. Scatter with the flaked almonds and bake until a skewer comes out clean. 40-50 minutes.

Allow to stand for 10 minutes and dust with icing sugar, serve with warm custard and enjoy!
