People are always asking me for quick dishes that are high protein and great for meal prep... so here's the perfect recipe!

  1. Score the chicken and season. Cook at 180" for 25-30 minutes
  2. Add all your diced vegetables, chickpeas, beans and coriander to a bowl.
  3. In a separate bowl add the lemon juice, sweet chilli, garlic, herbs and tomato paste. Being to emulsify by stirring whilst adding the olive oil
  4. No add the dressing to your bowl salsa and mix well
  5. serve with your cooked chicken and spring onions.
