Chicken & Mango salsa
People are always asking me for quick dishes that are high protein and great for meal prep... so here's the perfect recipe!
- Score the chicken and season. Cook at 180" for 25-30 minutes
- Add all your diced vegetables, chickpeas, beans and coriander to a bowl.
- In a separate bowl add the lemon juice, sweet chilli, garlic, herbs and tomato paste. Being to emulsify by stirring whilst adding the olive oil
- No add the dressing to your bowl salsa and mix well
- serve with your cooked chicken and spring onions.
