In a food processor add prawns, ginger, garlic, sesame oil, egg white, soy sauce, pepper and sugar. Make it into a finely minced paste.
Add the spring onions. Cover and chill in the fridge for 30 mins.
Take a heaped tablespoon of the prawn mixture and spread on one side of each bread slice.
Brush the beaten egg on top and sprinkle with sesame seeds. With your hands pat the sesame seeds on the slice.
Heat oil in a pan. Cook the bread slices one at a time till both sides are golden.
Drain on kitchen towels. Serve with sweet chili sauce.
