Garlic Mushroom Trofie

Not loads of people will be familiar with Trofie pasta but it's just as tasty if not tastier than a lot of the more popular pasta's we know. It has an elegance about that when you have a lovely bowl of the stuff in front of you, you know you've hit a winner and this recipe though simple, bangs flavour in every mouthful.

Total 15 minutes
  1. Bring a large saucepan to the boil, add a good pinch of salt. Pour in the trofie pasta and cook for 10mins until al-dente.
  2. In a large frying over medium/high heat, add the olive oil and once hot add the mushrooms to the pan and begin to fry for 5-6mins until they start to turn golden.
  3. Once they've turned golden, add the garlic to the pan and stir continuously for 2mins making sure the garlic doesn't get chance to sit and burn.
  4. Once the pasta is cooked, with a slotted spoon take the pasta from the saucepan into the frying pan, don't worry if bits of water get into the frying pan (we want that).
  5. Give the pasta and mushrooms a mix up, then add the butter and stir together for a further minute. Sprinkle in the chopped parsley and give it a final stir, check for seasoning and adjust if needed. Serve up and dig in. Enjoy
