Ingredients
Steak marinade
  • 0.5 kg Skirt steak
  • 2 tbsps Lime juice
  • 2 tbsps Brown sugar
  • 150 ml Orange juice
  • 100 ml Soy sauce
  • 2 tbsps Olive oil
Steak rub
  • 1 tbsp Cumin
  • 1 tbsp Garlic powder
  • 1 tbsp Brown sugar
  • 2 tsps Paprika
  • 2 tsps Chilli powder
  • 2 tsps Celery salt
  • 2 tsps Onion granules
Guac
  • ½ Juice of a lime
  • 2 Large avacados
  • 1 tbsp Chopped coriander
  • 1 tbsp Olive oil
  • ½ tsp Salt
  • ½ tsp Pepper
The rest
  • Flour tortillas
  • Pink onions
  • Chopped red chilli
  • Chopped coriander

Marinated steak bringing the best Mexican street tacos to your home

Prep 45 minutes
Total 10 hours 45 minutes

Take the steak marinade and pop into a resealable bag with the steak and place in the fridge for 8-12 hours.


Once ready to cook mix together the rub ingredients, take the steak out of the marinade then rub...the rub.... all over the steak. Leave on the counter top to absorb the rub flavour and come to room temp before cooking (about 45 mins).


Prepare the guac by peeling the avacados and removing the stones then crushing with a fork in a bowl with the other ingredients.


Heat some oil in a pan and throw in your steak and cook to your liking. Just make sure the pan starts off real hot to get a nice char on the outside of the meat.


Rest the steak for 15 mins then slice, fill the tortillas, add the guac, the pink Os and sprinkle with red chilli and coriander.
