Ingredients
Marination for chicken
  • 700 g Boneless chicken (cut into cubes)
  • 1 tsp Minced ginger
  • 1 tsp Freshly cracked black peppercorns
  • 1 tsp Soy sauce
Other ingredients
  • 1½ tbsps Minced ginger
  • 2 Garlic cloves (sliced finely)
  • 6 Green onions (Cut into 1 inch slices)
  • 1 tbsp Oyster sauce
  • 1 tsp Dark soy sauce
  • ½ tsp Freshly cracked black peppercorns
  • ½ tsp Brown sugar
  • 1 inch of ginger cut into fine juliennes
  • 2 Thai red chillies

Ginger Chicken

  1. Marinate the boneless chicken thighs with the ingredients mentioned in the section "Marination for chicken" for at least 30 minutes.
  2. Heat 1-2 tbsp. of oil in a wok and when the oil is hot, add the minced ginger and sauté it for a minute or so to caramelize the ginger and flavor the oil.
  3. Then add the marinated chicken and continue stir frying it for 5-6 minutes till the chicken gets some color on the sides.
  4. Add the sliced garlic and the white portion of the green onions and continue stir frying for another couple of minutes
  5. Whip up the sauce in another bowl by mixing the soy sauce, oyster sauce, brown sugar and the freshly cracked black peppercorns. Then add this sauce to the wok and stir everything well and then continue to stir fry on high heat for another 4-5 minutes. Then you can reduce the heat and cover the wok and let the chicken cook completely.
  6. Once the chicken is cooked through (should take approximately 10-15 mins), remove the lid and give everything a toss and then add the green part of the green onions along with finely slit Thai red chilies. Check the seasoning and add salt if needed and switch off the heat.
  7. In another small pan heat 1 tsp of oil and then fry the julienned ginger till they are lightly fried and beautifully golden. Remove these fried and caramelized julienned ginger and sprinkle them over the chicken before serving.
