

Chocolate Courgette Loaf
some people are scared of using vegetables in cakes, but honestly they are the perfect addition! They add great moisture and texture to a cake, without impacting the flavours.

- Preheat the oven to 180 degrees. Grease/line your loaf tin
- Mix together the flour, cocoa, baking powder & salt
- In a separate bowl mix the eggs, melted butter, oil, vanilla extract and brown sugar until smooth
- Stir the dry ingredients into the wet ingredients.
- Stir in the courgette and then 3/4 of the chocolate chopped up
- Pour into the tin and sprinkle the remaining choc on top! Bake for 50-60 minutes.
- Leave to cool and VOILA!
