  • 55 g unsalted butter, melted
  • 60 ml vegetable oil
  • 150 g light brown sugar
  • 1 tsp vanilla extract
  • 1 large courgette, shredded
  • 180 g dark chocolate

Chocolate Courgette Loaf

some people are scared of using vegetables in cakes, but honestly they are the perfect addition! They add great moisture and texture to a cake, without impacting the flavours.

Prep 20 minutes
Total 1 hour
  1. Preheat the oven to 180 degrees. Grease/line your loaf tin ⁣
  2. Mix together the flour, cocoa, baking powder & salt ⁣
  3. In a separate bowl mix the eggs, melted butter, oil, vanilla extract and brown sugar until smooth ⁣
  4. Stir the dry ingredients into the wet ingredients. ⁣
  5. Stir in the courgette and then 3/4 of the chocolate chopped up ⁣
  6. Pour into the tin and sprinkle the remaining choc on top! Bake for 50-60 minutes. ⁣
  7. Leave to cool and VOILA!
