Ingredients
  • 1 can cannellini beans
  • 3 garlic cloves (chopped)
  • 1 chilli (chopped)
  • 2 tbsps tomato paste
  • 1 medium red onion (chopped)
  • 3 tbsps olive oil
  • large handful chopped coriander
  • 1 lemon (juiced) + 1/2 zest
  • salt to taste
  • 1 tsp paprika powder

Cannellini Bean and Lemon Stew

  1. In a medium pot, add the oil and fry the onions and chilli with some salt and paprika until softened. Add the garlic, and the tomato paste
  2. Add the beans, a touch more salt, then add the lemon juice and zest, bring to a boil then leave to simmer for around 10 - 15 minutes 
  3. Add more salt if needed then stir in the coriander, cook for a few more minutes. Serve!
