Ingredients
Proteins:
  • 4 Large Eggs
  • 4 Salmon Fillets
Potato Cakes:
  • 3 Large Potatoes
  • 1 Egg
  • 40 g Cheddar (Finely Grated)
  • 6 Spring Onions (finely sliced)
  • 1 Heaped tablespoon Plain Flour
  • 15 g Butter
Cheat Hollandaise
  • 100 g Unsalted Butter
  • 1 tsp Water
  • 1 tsp Lemon Juice
  • 1 Egg Yolk
  • Pinch of Sea Salt

Salmon with Spring Onion & Cheddar Potato Cakes
Hens Egg & a Cheat Hollandaise

This flavourful dish is the perfect light supper or brunch. Flaky salmon, delicious Potato Cakes & a runny Egg, all topped off with a Hollandaise you can make in under a minute!!

Prep 30 minutes
Total 30 minutes

For the Potato Cakes:

  • Peel & Boil the Potatoes until soft.
  • Meanwhile, fry off the Onion in the Butter until softened.
  • Drain the Potatoes & rice them into a bowl with all the other ingredients. Mix well to combine.
  • Pop a frying pan over medium heat, add a knob of butter & melt then add a spoonful of mixture. Flatten it with a spatula, cook for 2-3 mins until golden then flip and repeat.

For the Hollandaise:

  • Pop the Butter in a pan on a medium/ high heat, bring to the boil & cook until most of the white frothy residue is burnt off (100-105C). DO NOT BURN!
  • Meanwhile, add the remaining ingredients to a high sided container.
  • When the butter is ready, transfer it into a heatproof jug.
  • Using a hand blender, blitz the egg mix then very slowly add the butter in a thin stream.
  • The sauce will thicken & turn glossy - you can make it while the potatoes are boiling.

For the Proteins:

  • Start cooking both just before you drain the Potatoes.
  • Fry the Salmon for a minute on each skinned side in a little butter over a medium heat then turn skin side down & cook through (5-7 minutes).
  • Pop the eggs into a pan of boiling water, cook for 6 minutes then place in a large bowl of cold water to cool slightly. Peel & set aside until needed.
