EASY BREAD AND BUTTER PUDDING
Brioche and Butter Pudding
The first time I heard of bread and butter pudding I thought grosss; who wants to eat soggy buttered bread....Well that was they. I found that I actually love this dish and it is a good way to use up any stale bread...Since I did not have bread and had burger buns...Brioche burger buns to be exact. I wasn't planning on making burgers so I used those instead and honestly it turned pretty good..The addition of the lemon curd and blueberries help cut through the richness...it was still delicious though.
You can use and soft bread you have at hand and cut away the crust if you want...
An oven proof dish, greased with butter...
In a bowl, whisk fresh cream & custard to a smooth consistency. Set aside
Butter the buns, then spread the lemon curd on the bread.
Then, Lightly butter an oven proof dish (Use about 1 tsp or less of butter).
Arrange the slices of bread in the dish and allow them to overlap slightly.
Sprinkle the raisins on top and stuff the raisins into every nook & cranny you can.
Pour the custard mixture over the bread & move the slices if you can so it gets to the bottom of the dish.
Set aside for 30 minutes to soak…
Then Preheat your oven to 180℃
Bake for 30 minutes 180℃ until golden brown & puffy.
