Ingredients
  • 140 g Penne pasta
  • ½ Finely chopped red onion
  • 3 Finely chopped cloves of garlic
  • 1 Chopped red chilli
  • 1 tsp Paprika
  • 1 tsp Dried oregano
  • 300 g Chopped tomatoes
  • 165 g Raw king prawns
  • 40 g Nduja
  • 100 g Mozzarella
  • Some chopped parsley to garnish

  1. Bring a pan of heavily salted water to the boil and add your pasta, in a separate pan, fry off your onion for 4-5 min then add garlic and chilli and cook for a further 2-3 min then add the tomatoes, paprika and oregano and give it a good stir.
  2. Add a splash of oil to a hot frying pan and add the nduja, cook for 1-2 min then add the prawns and cook for 2 min each side.
  3. Once the pasta is cooked drain ( but keep a bit of the pasta water ) and return to the pan and pour the tomato sauce over the pasta and give it a good mix and add a splash of pasta water, then add the prawns & nduja and serve in a bowl, top with bits of mozzarella and chopped parsley. ENJOY
