An easy to slice and share coffee traybake with a milk coffee icing perfect for cake sales, afternoon tea or a coffee morning!
Pour the icing over the cake whilst still in the baking paper or tin to catch spillages - it runs a lot!
Adding the ingredients gradually introduces more air to the sponge and makes it super soft - you can add it all together if you are pushed for time but it won't be as good
Preheat oven to 160℃ and line a 30x23x3.5cm tin (or similar)
Cream the butter and sugar until smooth and airy
Add 2 eggs at a time, mixing well inbetween to a silky mixture
Add the flour 2tbsp at a time until silky and smooth
Add milk, vanilla and coffee dissolved in boiling water
Pour into tin and bake 25-30mins until springy and a skewer comes out clean
For the icing, whisk together the ingredients and pour over the cooled cake. Allow to set. Dust with cocoa powder if desired.
