Honey Glazed Sweet Potato Mini Pancakes

I love sweet potatoes for their sweet taste and the nutritive value. A variety of dishes can be made using sweet potatoes. Pancakes are one of them. These are Chinese pancakes and are very different from the usual pancakes we are used to and hence intrigued me. Most of them use glutinous rice flour, since I did not have the glutinous rice flour, I have used the plain flour. But they still taste great.

The pancake dough is prepared more like the cookie dough but firmer and more like the chapati dough which is easier to make balls. They are coated with sesame seeds and pan-fried. We loved it. They can be had for breakfast or as dessert or evening snack. It’s up to you.

For the pancake dough

  • Sweet potatoes: 2 (cut into cubes)
  • Plain flour: 1 cup
  • Oil: 2 tbsp
  • Salt: ¼ tsp
  • Sesame seeds: 2-3 tbsp
  • Water: 2 tbsp

Step 1:

Steam the sweet potatoes or cook them with little water in a pan. Cover and cook them until the sweet potatoes turn mushy. It will take about 10-12 minutes. Mash the sweet potato. Let it cool down.

Step 2:

Add the plain flour and salt to the mash and mix. Prepare the dough so that the dough is not too wet and doesn’t stick to the hands. Add more flour if necessary as the amount of flour needed changes with the size of sweet potatoes and the mash formed. The dough is perfect when you can easily make balls. The dough makes about 15 balls.

Step 3:

Press the balls and coat them with sesame seeds.

Step 4:

Heat the frying pan and add oil. Once the oil heats up, cook the pancakes evenly on the both sides. You can have these pancakes as they are now or coat them with honey and maple syrup.

Step 5:

Add honey (skip if vegan), maple syrup and few table- spoon water on top of pancakes and flip them. Take off the flame within a minute and serve hot. (taking them off the flame within a minute of coating them in syrup is important as they caramelize very quickly and the sauce becomes very sticky).

If you don’t like it saucy, just shallow fry and eat them, they taste good as well.

Please do try the recipe, you will not regret it. Who know you may never go back to eating the pancakes the old way!!! I doubt it, but if you like pancakes and sweet potatoes, you will surely like this with a twist.
