Ingredients
  • 1 medium tomato (chopped)
  • ¼ onion (chopped)
  • 1 garlic clove (chopped)
  • 4 shiitake (sliced)
  • 2 tbsps (heaped) kimchi
  • 1 tbsp red miso paste
  • small handful bok choy (halved - vertically)
  • 2 tsps cooking oil
  • 3 cups water
  • salt for taste

Dumplings in a Tomato Miso Kimchi Soup

This light broth, packed with vegetables, pairs deliciously with any one of my dumpling recipes


  1. In a pot, start by frying the onions, garlic and tomato with some salt in some oil. Fry until the tomatoes are cooked through and soften
  2. Add the water, stir in the miso paste, add the mushrooms and bring to a boil.
  3. Add the kimchi keep boiling for a few minutes, add more salt, turn down the heat and simmer for a few more minutes
  4. Add the dumplings (this stock is good for around 12 dumplings), cook for a few minutes
  5. Throw in the bok choy, and bring to boil again, for around 2-3 minutes and serve
