Made using Flank Steak & an Organic Chocolate Stout that was left from my Chocolate Cake recipe.
The stout gave it such a deep bitterness, which I balanced with a couple of pieces of dark chocolate, fresh Oregano & hefty amount of Smoked Paprika!!
All served with a good dollop of homemade Guac, Tilda Lime & Coriander Rice (which is awesome!), Sour Cream, Salad, Homemade Wrap Tortilla Chips & a sprinkling of Cheddar.
Super punchy family supper, will definitely be making this again!
- Preheat your oven to 120C
- Brown the Beef in an oven proof casserole dish then set aside.
- In the same pan fry off a roughly chopped Onion, finely diced Celery, diced garlic & finely chopped Chillies & Oregano.
- When the Vegetables have all softened, add the Smoked Paprika & Tomatoes and cook until the Tomatoes start to break down.
- Add the Smoked Paprika & cook for one minute.
- Deglaze the pan with the Stout then reduce by half before adding back the Beef, Stock & Beans.
- Heat it all through then pop in the chocolate.
- Add a lid to the pan and pop the whole thing low in the oven for 3-4 hours until the Beef is fall apart tender.
- Serve with Rice, Guacamole, Tortilla Chips & Salad!

400 g Flank/ Stewing Steak
