  • 6 bacon medallions
  • 1 Spring Onions

Baked Bacon Egg Cups

Prep 10 minutes
Total 25 minutes
  1. Preheat your fan assisted oven to 180℃.
  2. Place your bacon in between two pieces of cling film and use a rolling pin to stretch them out slightly on all sides.
  3. Spray a muffin tray with cooking spray.
  4. Then line each muffin mould with one bacon medallion and cook for 10 minutes. Remove from the oven and drain off any fat/water.
  5. Optional - add spring onions to the bacon case followed by cracking an egg to each one.
  6. Season with salt and pepper and sprinkle the parmesan over all cups before returning to the oven for another 10 minutes depending on how you like your egg cooked.
