Sweet Potato & Bean Quesadillas

In need of a pick-me-up? These delicious beauties will pop that smile back on your face!

  • Slice the Red Onion & fry in a little oil until soft & sweet then set aside.
  • Microwave/ boil the Sweet Potato until soft then mash and season with salt & pepper.
  • Strain and rinse the Beans then add to a pan with the Garlic, as much Red Chilli flakes as you like & a little oil and fry for 2-3 minutes over a medium heat.
  • Add the Smoked Paprika, Tomato Puree & 50ml of water, crush the beans slightly with your spatula then cook until most of the water has evaporated.
  • Grab a wrap and layer with half the Sweet Potato, Cheddar, Onions then Beans and top with a 2nd wrap; repeat with the remaining ingredients.
  • Heat a non-stick frying pan to medium heat and fry each wrap for a minute on each side until golden before flipping and repeating on the other side!
  • Serve with green salad (if you fancy) and enjoy!!
