1 Thumb size piece of ginger finely chopped

4 Cloves of black garlic

2 Tins chopped tomato

1 Tin kidney beans

200 ml Red wine

250 ml Chicken stock

1 tbsp Dark soy sauce

1 tbsp Ketchup or Tomato Puree

2 Squares dark chocolate
Spice Mixture

1 tsp Ground Cinnamon
-
2 tsps Ground Corriander
-
2 tsps Cumin Seeds
-
2 tsps Chilli Powder
-
1 tsp Chilli Flakes
-
1 tsp Smoked Paprika
-
½ tsp salt
-
½ tsp Pepper


Chilli Con Carne
What's not to love with a good old bowl of chilli!
This beautiful Chilli con carne is so versatile it c an be served with rice, on top of nachos or a jacket potato!
Its a real winter warmer.
- Grind your spice mixture in a pestle and mortar
- Brown your mince in a hot pan
- Add your onions and pan fry until softened
- Add in your chopped black garlic, chopped garlic and chopped ginger
- Next add your dark soy sauce and red wine, allow to simmer until the liquid is almost gone
- Add your ketchup and tinned tomato's along with your chicken stock
- Transfer to a slow cooker and cook on low for up to 8 hours on low or 4 hours on high
- 30 minutes before the end add in your dark chocolate and kidney beans
