Bruschetta of Tomato and Salmon

I made this  bruschetta with tomato and salmon  on my holiday on the beach at a beautiful sunset in Croatia. The fresh tomato salsa goes very well with a delicious piece of fish on a bruschetta. This dish is also ideal for a delicious lunch with a tasty fruity white wine.

Bruschetta is of course available in all shapes and with various ingredients. I personally love them with a piece of grilled fish. You can make small ones that you can easily serve as a snack or as I did for lunch on a piece of bread. The variations are endless and you can find plenty on the internet.

  1. Cut the tomatoes in half and remove the seeds and cut the tomatoes into small cubes.
  2. Cut the cucumber into small cubes and mix them with the tomato cubes.
  3. Chop the basil and mix it together with the salt and pepper.
  4. Add lemon juice to the mixture and season.
  5. Cut four slices of the ciabatta bread and drizzle with olive oil.
  6. Grill the salmon with the skin on the rack over medium coals. Place the lid on the barbecue to a core temperature of 48℃.
  7. Grill the ciabatta slices in the meantime by placing them on the wire rack.
  8. Remove the ciabatta slices from the grid and coat them with tomato salsa.
  9. Place the salmon on the tomato salsa and sprinkle with some lemon juice if necessary.

Good luck making and lots of Grill fun!!!
