  • 100 g of mushrooms
  • 500 g gnocchi
  • 1 pack of chorizo (turkey chorizo used half a normal chorizo)
  • 1 red onion
  • Parmesan (to taste)
  • 3 tbsps mixed herbs
  • 3 birds eye chilli (optional)
  • 1 x Burrata
  • ¾ of a pot of pesto

PESTO CHORIZO GNOCCHI BAKE WITH ROASTED VEG

  1. Chop up vegetables and chorizo. Fry the onions and chorizo in the pan with seasoning. Preheat the oven to 200℃.
  2. Cook the gnocchi for 1 minute and drain.
  3. Add the tomato, onion, gnocchi and chorizo into an ovenproof dish. Drizzle with olive oil, seasoning of your choice and mix.
  4. Place into the oven for 15 minutes. Add the spinach and add into the oven for 2 minutes.
  5. Take out of the oven and add parmesan and pesto for 5 minutes.
  6. Add the burrata on top and drizzle some oil, pesto and black pepper.
