100 g cherry tomatoes

1 x Handful of spinach

100 g of mushrooms
-
500 g gnocchi
-
1 pack of chorizo (turkey chorizo used half a normal chorizo)

1 red onion
-
Parmesan (to taste)

3 tbsps mixed herbs
-
3 birds eye chilli (optional)
-
1 x Burrata
-
¾ of a pot of pesto


PESTO CHORIZO GNOCCHI BAKE WITH ROASTED VEG
BURRATA HEAVEN
- Chop up vegetables and chorizo. Fry the onions and chorizo in the pan with seasoning. Preheat the oven to 200℃.
- Cook the gnocchi for 1 minute and drain.
- Add the tomato, onion, gnocchi and chorizo into an ovenproof dish. Drizzle with olive oil, seasoning of your choice and mix.
- Place into the oven for 15 minutes. Add the spinach and add into the oven for 2 minutes.
- Take out of the oven and add parmesan and pesto for 5 minutes.
- Add the burrata on top and drizzle some oil, pesto and black pepper.
