Ingredients
  • 240 g Butter (softened)
  • 240 g Golden caster sugar
  • 240 g Self-raising flour
  • 4 Whole eggs
  • 3 Lemons
  • 100 g White caster sugar

Be aware, this won't last long!

1.   Beat together the butter and golden caster sugar until its pale and creamy. Slowly add the eggs, mixing through gradually.

2.   Sift in the flour along with the zest of two lemons.

3.   Mix until well combined

4.   Line a 8x21cm tin with baking paper, spoon the mixture inside and smooth out on top.

5.   Bake for 45 minutes at 180℃

6.   To check it’s done, insert a skewer into the middle, it should come out clean.

7.   While the cake is cooling, Mix the juice of two lemons with the caster sugar

8.   Take the cake out of its tin, prick with a fork all over the top. Drizzle the icing all over.

9.   Grate the zest of one lemon over the top.

10. Leave to completely cool, then serve.


As a youngster, I hit rock bottom and landed myself in a young offenders. I managed to turn my life around, became the first person to earn a Gold D of E Award behind bars and through this found my passion in cooking. I was taken on by Jamie Oliver, eventually started my own business and now find myself catering for royals and celebs. I use my love for food to spread joy and help others find purpose and change their lives. I mentor youngsters who have been in trouble with the law and regularly go back into prisons to share my experiences. I find myself being in a very fortunate position where I am able to do something I really love AND get paid for it!
