Creamy Prawn Linguine

This is an easy dish which can be had as often as you want after a long tiring day at work. But let me warm you this dish is addictive and indulgent … definitely had as main course, may I say the only course. Having said that we just love this dish. The prawns are so succulent and give the dish a wonderful sweetness along with the cream, cheese, garlic and the butter… the flavours get along so well making the dish packed with flavours yet mild on the senses. This can be an anytime go to dish. You only need a few ingredients. Cook the pasta of your choice and keep aside. Cook the prawns in garlic butter and set aside. Prepare the sauce in the same pan. Once the sauce is ready, get everything together and enjoy.

ingredients
  • Prawns: 400 gm
  • Garlic: 2 tbsp
  • Lime juice: 1 tbsp
  • Butter: 2 tbsp
  • White wine: 100 ml
  • Chicken stock: 100 ml
  • Extra thick cream: 2 tbsp
  • Cheddar cheese: 2 tbsp
  • Parmesan: 2 tbsp
  • Chilli flakes: 1 tsp
  • Parsley: 2-3 tbsp
  • Pasta: 350 gm

Creamy Prawn Linguine

Once the sauce is ready, get everything together and enjoy.

Step 1:

Marinate the raw prawns in salt, pepper and lime juice.

Step 2:

Cook the pasta in hot water. Add salt (1/2 tsp) and olive oil (1tbsp). Cook then for 10 minutes until they are almost done. Save a cup of starch for the sauce. Drain

and rinse the pasta in cold water to avoid over cooking.

Step 3:

In a stock pot, melt the butter (1tbsp), add the prawns and cook them on both sides for about 2 minutes on each side. Transfer the prawns into a bowl along with the

liquid.

Step 4:

Add butter (1tbsp) into the same pot let it melt. Add the chopped garlic, sauté and cook them on medium flame for about 2 minutes. Add the white wine, let it boil and

simmer until the wine is reduced a bit. Then add the chicken stock, cream and the liquid from the prawns. Mix well and then add both the cheeses. Let them combine well to form the sauce. Keep stirring to get the desired consistency. Once the sauce starts to thicken, Add the cooked spaghetti and prawns. Keep stirring.

Step 4:

Sprinkle additional pepper powder (optional) and chilli flakes (optional) and starch water to get the right consistency you want. Mix and garnish with chopped parsley. Enjoy while it's hot.
