  • macaroni, enough for 4
  • 40 g butter
  • 2 tbsps plain flour
  • 375 ml milk
  • 75 g mature cheddar
  • 240 g prime monkfish pieces
  • 50 g lobster meat
  • 8 tiger prawns
  • handful of panko breadcrumbs
  • a pinch of allspice
  • 1 Heaped tablespoon grated Shropshire blue

We all love mac and cheese, don't we! And this is a super special one, made with the most sumptuous mix of seafood in a creamy cheese sauce. Finished with a sassy Shropshire blue crumble topping! Shell the prawns for ease of eating or leave with shells on if you wnat to create a bit of drama!

  1. Start by getting your macaroni on, following the instructions of the pack for quantities and cooking times. Drain and set aside
  2. In the meantime, make the cheese sauce. Melt the butter, add in the flour and mix to make a paste (roux). Then slowly pour in the milk, bit by bit, stirring continously to incorporate the paste until you have a nice smooth sauce (use a whisk, if it starts to become lumpy!). Tip in the macaroni and cheddar cheese and stir through to melt the cheese
  3. Finally, nestle in the seafood. Brush the prawns with a little oil. Combine the breadcrumbs, allspice and blue cheese. Mix well and sprinkle over the top. Bake in a moderate oven for 15/20 minutes, until piping hot and bubbling
