The Prawns
  • 400 g Prawns
  • 2 tbsps Olive Oil
  • Sea Salt & Pepper
The Toppings
  • 4 tbsps Olive Oil
  • 1 Red Chili (Fine Dice)
  • ½ Red Onion (Fine Dice)
  • 1 Lime (Zest & Juice)
  • 400 g Cannellini Beans (Drained & Rinsed)
  • 8 Cherry Tomatoes (Cut Into 1/4's)
  • Fresh Coriander (Torn)
  • 50 g Rocket
  • Sea Salt & Black Pepper
The Salad
  • 200 g Mixed Leaves (Washed)
  • ½ Lime (Juice Only)

Prawn & Cannellini Bean Salad


  • Add olive oil to a pan on med/high heat, add prawns (season) and cook for 1-2 mins per side
  • Set prawns aside to cool
  • Mix together all topping ingredients as well as cooled prawns
  • Arrange mixed leaves on large serving platter or bowl, top with prawn/bean mix and squeeze lime juice over salad
  • Enjoy!
