Ingredients
  • 2 Salmon fillets
  • Tenderstem broccoli
  • 2 Medium sweet potatoes, peeled and cubed
  • 1 Heaped teaspoon Sweet paprika
  • 2 Garlic cloves
  • 2 tbsps Olive oil
Parsley Sauce
  • 1 Banana shallot, finely diced
  • Garlic clove, crushed
  • 2 Heaped tablespoon 0% fat creme fraiche
  • 50 ml Cold water
  • 50 g Fresh parsley
  • Pinch salt and pepper

Oven Roast Salmon, Paprika Sweet Potatoes, Charred Broccoli & Parsley Sauce

A superfood start to the week!

Sweet Potatoes:

  • Pre-heat the oven to 180℃
  • Add the peeled and cubed sweet potato to a lined baking tray. Toss in olive oil, paprika, salt and pepper and add the garlic cloves whole.
  • Place in the oven for 35 minutes until soft and starting to crisp. Remember to toss half way through cooking.

Salmon:

  • Season well with salt and pepper. Place on a lined baking tray and bake for 15-18 minutes depending on thickness.

Parsley Sauce:

  • Add the shallots to a pan with a tsp of olive oil. Gently cook for around 10 minutes until completely soft and translucent. Add the creme fraiche and water, slowly bring to a gentle simmer.
  • Add the chopped parsley with a good pinch of salt and pepper and cook for 3 minutes.,
  • Remove from the heat and blitz in a blender until smooth. If it a little thick add a splash of water.
  • Add back into a clean pan, taste and season more if needed. Leave to one side to reheat when needed.

Charred Broccoli:

  • Heat a large frying with a tsp of olive oil on a high heat. Add the broccoli and leave to cook on one side until it starts to turn golden brown, flip and continue to cook for 2 more minutes.
  • Once nicely charred, season with salt.
