4 tbsps Granular Sweetener

Lemoncurd ๐

- Grate the rind from one lemon using a fine grater.
- Add the juice of the 3 lemons to a jug together with the grated rind and the sweetener, whisk it through and microwave until the sweetener dissolves.
- Break 2 eggs into a separate bowl and lightly beat before adding them to the jug and then whisk together.
- Return the jug to the microwave and heat for 30 seconds before whisking again. Do this 3-4 times, whisking thoroughly each time.
- It will thicken up and increase in volume each time.
- Sterilise a couple of small glass jars and when ready add your lemon curd and refrigerate.
- It will last a couple of weeks but to be honest youโll eat it much quicker than that!!
