Ingredients
  • 3 Lemons
  • 4 tbsps Granular Sweetener
  • 2 Eggs beaten

Lemoncurd ๐Ÿ‹

  1. Grate the rind from one lemon using a fine grater.
  2. Add the juice of the 3 lemons to a jug together with the grated rind and the sweetener, whisk it through and microwave until the sweetener dissolves.
  3. Break 2 eggs into a separate bowl and lightly beat before adding them to the jug and then whisk together.
  4. Return the jug to the microwave and heat for 30 seconds before whisking again. Do this 3-4 times, whisking thoroughly each time.
  5. It will thicken up and increase in volume each time.
  6. Sterilise a couple of small glass jars and when ready add your lemon curd and refrigerate.
  7. It will last a couple of weeks but to be honest youโ€™ll eat it much quicker than that!!
