- Pour the oats into a blender and blend into a fine flour.
- To the oats add the baking powder, salt and cinnamon.
- In a separate bowl mix the egg, vanilla and yoghurt together and then add this to the oats and mix until just combined.
- Leave the mixture to sit for 10mins. Meanwhile, preheat the oven to 180c.
- After 10 minutes, spray a 9x13 inch baking tray (or i used a cake tin) with spray oil, then spread the pancake mix into the tin (making sure not to over mix, or the pancake will sink in the oven).
- Next, gently scatter over the frozen berries and banana slices and place in the oven for 25minutes or until golden and cooked through.
- Once cooked, let sit for a while to make it easier to slice, then serve with your favourite toppings! Mine is simply with a drizzle of golden syrup or honey!
