Sheet Pan Oat Pancakes

Sheet Pan Oat Pancakes

These pancakes make for the perfect brunch/gym refuel/dessert! And the best thing about it is that you don't need to stand around the hob flipping pancakes, you can stick it in the oven and relax!

It’s also a great recipe to meal prep with for an easy grab and go breakfast!

  1. Pour the oats into a blender and blend into a fine flour.
  2. To the oats add the baking powder, salt and cinnamon.
  3. In a separate bowl mix the egg, vanilla and yoghurt together and then add this to the oats and mix until just combined.
  4. Leave the mixture to sit for 10mins. Meanwhile, preheat the oven to 180c.
  5. After 10 minutes, spray a 9x13 inch baking tray (or i used a cake tin) with spray oil, then spread the pancake mix into the tin (making sure not to over mix, or the pancake will sink in the oven).
  6. Next, gently scatter over the frozen berries and banana slices and place in the oven for 25minutes or until golden and cooked through.
  7. Once cooked, let sit for a while to make it easier to slice, then serve with your favourite toppings! Mine is simply with a drizzle of golden syrup or honey!
