  • 8 sprouts, thinly sliced
  • a couple of garlic cloves, thinly sliced
  • coarse sea salt
  • 25 g butter
  • good handful of Parmesan
  • freshly-ground black pepper

If you’re not a great sprout lover, then this is way to eat them... thinly sliced and stir fried in brown butter, garlic and sea salt. This pasta takes about 20 mins to cook to ‘al dente’, but if you’re using fresh pasta, this is a ready in 5 minutes dish! A great mid-weeker or the perfect Friday night TV supper! 

  1. Assuming you’re using dried pasta (and of course any type of pasta works with this), follow the instructions on the pack for quantities and cooking times and get it on the go
  2. In the meantime, thinly the sprouts in a shallow pan with the garlic, also thinly sliced, a good pinch of coarse sea salt and a slab of butter. When the pasta is nearly ready, melt the butter over a medium heat and stir fry the sprouts for a few mins. You want the butter to slowly foam, caramelise and turn to a golden brown colour. As soon as it starts to smell nutty, it’s ready
  3. Finally, drain the pasta, retaining a little of the cooking juices and tip into the pan with the sprouts. Take off the heat, grate in a good handful of Parmesan and mix well. Finish with a good grind of black pepper and serve with some additional Parmesan on the side!
