  • 800 g Boneless Pork leg
  • 1 litre Pineapple juice
  • 100 ml Tequila
  • 2 tsps Paprika
  • 2 tsps Garlic granules
  • 2 tsps Chipotle flakes
  • 2 tsps Sea salt flakes
  • 1 tsp Cayenne pepper
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme
Serving suggestion
  • 12 Corn tortillas
  • Avocados, smashed
  • Feta cheese
  • Pickled onion/rhubarb
  • Fresh Coriander
  • Lime
  • Sour cream

Spicy pineapple and tequila pulled pork

Total 5 hours 30 minutes
  1. Trim the skin and fat off of the pork and use to make crackling to garnish if you wish.
  2. Add all of the ingredients to a slow cooker and set to high for 4-5 hours.
  3. Remove the pork from the slow cooker and shred with two forks. Meanwhile, reduce the cooking liquor until thick and then add back to the pork. Toss to combine.
  4. Serve with the accompaniments of your choice.
