INGREDIENTS

  • ¾ Cup
  • 2 tbsps White vinegar
  • 1 Cup plain flour
  • 1 tbsp Sugar
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • ½ tsp Salt
  • 1 Egg
  • 2 tbsps Melted butter
  • 1 Cup fresh blueberries
  • Cinnamon to taste
Buttermilk Blueberry Pancakes

Buttermilk Blueberry Pancakes

Nothing stacks up to these fluffy blueberry and cinnamon buttermilk pancakes.

  1. Mix the milk and vinegar and let sit for a minute or two (sounds gross but its an important step as it makes the 'buttermilk'.
  2. Whisk the dry ingredients together (i put half of the blueberries into the batter). Then whisk the eggs, milk and melted butter into the dry ingredients until just combines.
  3. Heat a non stick pan with a little oil over medium heat.
  4. Pour 79 ml of batter into the pan. Cook until you see little bubbles in the top of the pancake. Flip and cook for a further 1-2 minutes until fluffy and cooked through.
  5. Serve warm with a squeeze of honey and top with the rest of the blueberries.
