Ingredients
  • 150 g Baby squid
  • 80 g Plain flour for dusting
  • 1 Bunch of Parsley
  • 1 Fresh chilli
  • 2 Cloves of garlic sliced
  • 1 Lemon
  • 1 litre Frying oil
Homemade Mayonnaise
  • 2 Egg yolks
  • 1 tbsp Dijon mustard
  • 300 ml Sunflower oil
  • Juice of 1 lemon

Crispy fried squid with a homemade Garlic Mayo, Perfect as a fun snack during the summer months

  1. Slice the squid to open it up so it is flat. Then lightly score the flesh being careful not to cut right through.
  2. Cut the squid into 2 inch chunks
  3. Toss the squid in flour, use your hand and really press in hard
  4. If you have a deep fryer, set the temperature to 170℃
  5. Fry for about 4-5 minutes until its nice and crispy
  6. Transfer the squid to a mixing bowl, toss with chopped parsley and sliced chilli
  7. Fry the sliced garlic for 20 seconds, then toss with the squid
  8. Season, and serve with garlic mayonnaise and a wedge of lemon.
  9. To make the Mayonnaise, using an electric whisk, add the egg yolks and dijon mustard and beat together.
  10. Slowly add the oil until it has emulsified and you have mayonnaise consistency.
  11. Add the lemon juice, if the mayo is thick add a splash of water to loosen it up.
  12. Add chopped garlic.

As a youngster, I hit rock bottom and landed myself in a young offenders. I managed to turn my life around, became the first person to earn a Gold D of E Award behind bars and through this found my passion in cooking. I was taken on by Jamie Oliver, eventually started my own business and now find myself catering for royals and celebs. I use my love for food to spread joy and help others find purpose and change their lives. I mentor youngsters who have been in trouble with the law and regularly go back into prisons to share my experiences. I find myself being in a very fortunate position where I am able to do something I really love AND get paid for it!
