Gingerbread Men


These gingerbread cookies are a simple and delicious festive treat. Great for baking with the children and they make a lovely homemade christmas gift. Make gingerbread men or any other shape.
- Preheat the oven to 170℃.
- Add the flour, bicarbonate of soda and butter into a large mixing bowl. Use the rubbing in method to rub together the ingredients until it resembles a fine crumb.
- Add the soft brown sugar and the spices and mix well.
- Next, add the egg and the golden syrup. Use a spoon to mix it in as much as you can. Eventually you will need to get stuck in with your hands.
- Use your hands to clump the dough together until it is one large piece.
- Lightly flour a clean surface, tip the dough out and knead for a few minutes until the dough is silky smooth.
- Pat into the shape of a 'puk'. Cover in cling film and place the dough into the fridge for at least 20 minutes.
- Roll the dough out on a floured surface until it is approx 1/2 cm thick.
- Use christmas themed biscuit cutters to cut shaped out of the dough.
- Place them onto a lined baking tray and place into the oven for 10-12 minutes.
- Leave the biscuits to cool on the tray for five minutes before transferring to a cooling rack. Let them cool completely before decorating.
- Decorate the biscuits in any way you like.
