Chop all the veggies finely. In a frying pan, heat oil (2tbsp), add the chopped onions, sauté for a minute, add the potato, cook for 3-4 minutes, then add the mushrooms and peppers in that order. Cook them for 2 minutes, finally add the tomatoes , mix and cook for about a minute and take the veggie mix off the flame.
In a large bowl, add the eggs, salt and pepper powder, whisk properly so that whites and yolk mix properly.
In a frying pan, add a 2 ladleful of egg mix (about a third of egg mix). Cook the eggs for 2-3 minutes. Once the egg is almost cooked, add the veggie mix (3 tbsp) on one half, sprinkle with cheese (1-2 tbsp)and cover the other half on top. Plate and enjoy.
Repeat the same process for the next omelettes. This mix can make 3-4 omelettes depending on the size of your frying pan.
