  • 250 g Sour cream
  • 120 g Mayonnaise
  • 150 g Blue cheese
  • 1 tsp Worcester sauce
  • 1 tbsp White wine vinegar
  • ½ Juice of a lemon
  • 1 kg Chicken wings
  • 200 g Plain flour
  • 1 tsp Cayenne pepper
  • ½ tsp Mustard powder
  • 1 tsp Garlic powder
  • ½ tsp Paprika
  • 100 ml Hot sauce
  • 1 Sliced spring onion

1.For the blue cheese dipping sauce add to a blender the sour cream, mayo, blue cheese, Worcester sauce, white wine vinegar, and juice of a lemon and give it a little blitz until smooth and creamy and serve in a bowl.

2.For the wings put the flour, cayenne pepper, mustard powder, garlic powder and paprika in a bowl and give it a mix, then coat the wings on your flour mix and deep fry for 8 min or until they are golden brown then transfer onto tissue to drain, then add them to a big bowl and cover on you’re sauce of choice ( I used spice islands scotch bonnet & spiced rum chilli sauce ) and give it a good mix, serve with the blue cheese dip and some sliced spring onions
