Potato, Thyme and Goat’s Cheese Pie Potato, Thyme and Goat’s Cheese Pie

An open pie is such an appetising thing to look at! This one is made with layered, wafer-thin slices of potato, fresh thyme and the goats cheese and so easy to make. As ever I’m extolling the virtues of home-made pastry... made in minutes - and this time, all butter, so melt in the mouth!

  1. Start with your pastry (home-made or ready-made - see 'tips' for homemade) rolled out into an oval shape (about 40 x 30cm) and carefully transfer to a piece of parchment paper on the baking tray.
  2. Then peel one large potato and slice as thinly as possible (like crisps, ideally) and arrange in the middle of the pie, overlapping each one and leaving about 3cm around the edges. Add in slices of the goat’s cheese, randomly, plus a few slices of the candy beetroot, also sliced wafer thin. Fold over the pastry edges and brush with a little beaten egg.
  3. Finally, finish off with some fresh thyme leaves and a few sprigs of rosemary, some seasoning and a liberal drizzle of olive oil. Bake in a moderate oven (160℃-ish) for 25/30 mins, until the pastry has browned nicely all over.
