Happy Hummus

A delicious twist on this classic side dish. enjoy this surprising hummus with the richness of black garlic added for a depth of flavour.

  • 500 g raw aubergines
  • 400 g chickpeas, drained
  • 15 Black Garlic cloves, smashed (30g paste)
  • 1 raw garlic clove, minced
  • 4 tbsps olive oil
  • 2 tbsps lemon juice
  • 2 tbsps tahini
  • 1 tsp salt (or to taste)
  • 1 tsp dry red paprika powder
  • 1 tsp dry cumin powder
  • 1 tsp white pepper
  • 1 tbsp fresh cilantro/coriander leaves, minced or finely chopped (optional)
  • A drizzle of olive oil and lemon juice
  1. Preheat oven to 200℃.
  2. Coat aubergine pieces in olive oil and arrange them on a baking in a single layer.
  3. Roast for 30 minutes and allow to cool down before adding them to a food processor.
  4. Add all remaining hummus ingredients and process to desired consistency.

Serve with drizzle of olive oil and lemon juice.
