  • 2 chicken breasts
  • 150 g plain flour
  • 50 g corn starch
  • 1 tbsp jerk marinade
  • ½ tsp allspice
  • ½ tsp salt
  • 4 tbsps buttermilk

Prep 25 minutes
Total 2 hours 30 minutes
  1. Cut the chicken breasts into cubes and add them to a bowl with the jerk marinade. Leave to marinate for 2+ hours in the fridge.
  2. Pre-heat the oven to 200c.
  3. Add the flour, cornstarch, allspice and buttermilk (or milk with lemon juice) into a bowl and combine until it looks slightly lumpy.
  4. Gradually add the chicken to the flour mixture until well coated.
  5. Add enough vegetable oil to a pan, to be just above the chicken. Heat this to 170c.
  6. Add the chicken in batches and remove once they look crispy and golden after around 3 minutes.  
  7. Put the chicken on a baking sheet and put it in the oven for 10 minutes to ensure it’s fully cooked through.
  8. Serve with rice and peas and a good squeeze of lime.
