

Fried jerk chicken

- Cut the chicken breasts into cubes and add them to a bowl with the jerk marinade. Leave to marinate for 2+ hours in the fridge.
- Pre-heat the oven to 200c.
- Add the flour, cornstarch, allspice and buttermilk (or milk with lemon juice) into a bowl and combine until it looks slightly lumpy.
- Gradually add the chicken to the flour mixture until well coated.
- Add enough vegetable oil to a pan, to be just above the chicken. Heat this to 170c.
- Add the chicken in batches and remove once they look crispy and golden after around 3 minutes.
- Put the chicken on a baking sheet and put it in the oven for 10 minutes to ensure it’s fully cooked through.
- Serve with rice and peas and a good squeeze of lime.
