Cracked Brownie Cookies

Soft, squidy brownie centres in a crisp, cracked chocolate shell - these brownie cookies are the divine treat you've been waiting for. Super easy, quick to make and suitable for all the family!

Wastage Tips
  1. Mix cocoa, oil and sugar together
  2. Add in eggs one at a time, mixing between them until fully incorporated
  3. Mix the flour, baking powder and a pinch of salt together
  4. Add flour mixture into the batter and mix until smooth and dough-like
  5. Cover the mixing bowl and chill for 1hr in the fridge, so the dough sets slightly
  6. Heat oven to 190℃ and line 2 baking sheets. Pour some icing sugar into a shallow bowl or dish.
  7. Roll 1tbsp amounts of the batter into balls, roll in the icing sugar to coat lightly, place on baking tray. Repeat until all the mixture is used up, making around 18-20 'balls'.
  8. Bake for 12 minutes until tops are cracked and cookies have risen. They will appear very soft, don't worry they harden as they cool.
  9. Remove from oven and allow to cool fully on the trays
  10. Keep in an airtight container for 3-5 days (though I highly doubt they'll last that long!)
